Monday Munchies: Egg and Avocado
Lunch can be a hassle sometimes when I haven't gotten my food prep done. I have a go to lunch that takes no time to make when I have boiled eggs prepared, so I wanted to share it today. I use an egg cooker as well, so it alarms me when done, super easy and no clean up! This is a high fat low carb recipe, so a great refuel for those of us who don't get along with carbs very well! lol Looks gross tastes amaziiiiiiing!!!
2 hard boiled eggs peeled and cut into chunks
1 small avocado peeled and cut into chunks
I just throw in a bowl and salt and pepper to flavor, stir and ENJOY!
